USDA’s School Lunch Rollback Proposal is Bad Recipe for Student Health

The U.S. Department of Agriculture’s new plan to roll back National School Lunch Program standards is not the best recipe for keeping students healthy. Instead of rolling back standards, the United States should be looking for ways to cut back on unhealthful lunch-line staples like cheeseburgers, pizza, and other entrees that are loaded with saturated fat and cholesterol. Replacing these foods with healthful fruits, vegetables, whole grains and beans would go a long way in boosting students’ health. Breakfast Today: Chocolate Protein Pudding

Although it is great for breakfast, it can also make a yummy dessert and even makes a great post-workout snack. Silken tofu is the main protein source. It has a smoother, less beany taste than regular tofu. It works well in desserts, smoothies and other recipes calling for a sweeter taste, which makes it perfect for this pudding. A bonus is that tofu is also a good source not only of high-quality protein, but also of many other nutrients, including calcium, iron, omega-3 fatty acids and selenium.
