Record-setting ultra-distance runner Scott Jurek pioneered the use of vegan diets for endurance, and tennis champion Novak Djokovic even started a vegan restaurant.

Now, Formula One driver Romain Grosjean is asking why an athlete would want to go vegan. As a doctor, let me jump in. Here’s why.

Dinner Tonight: Leftover Roasted Vegetable Soup

roasted vegetablesThis weekend we cleaned out the fridge and there were some pretty sad looking vegetables in the drawer. We also had an overabundance of tomatoes from my parents’ garden. But instead of tossing them into compost, I cleaned them up and turned those droopy veggies into a yummy roasted vegetable soup.

Food waste has big social, environmental and economical impacts. The U.N. Food and Agriculture Organization estimates that almost 40% of the food produced and distributed in the United States never gets eaten. That works out to an estimated $160 billion in food a year. New York City Schools Ban Processed Meat!

Hot dogs, pepperoni, and other cancer-causing processed meats are officially off the menu at New York City public schools! New York’s City Council recently passed Resolution 238, calling upon the Department of Education to eliminate processed meats in public schools. Brooklyn Borough President Eric Adams and Council Member Fernando Cabrera introduced the resolution in 2018.

“We cannot continue feeding our children substances that are scientifically proven to increase their chances of cancer later in life,” said Borough President Adams, who reversed his type 2 diabetes by adopting a plant-based diet in 2016. Continue reading “New York City Schools Ban Processed Meat!”

Meat and Stroke

A 2019 report from the EPIC-Oxford study showed that meat eaters were more likely to have heart disease but less likely to have a particular kind of stroke, called a hemorrhagic stroke, compared with vegetarians. Hemorrhagic stroke refers to bleeding in the brain. The part about meat eaters being more likely to have heart disease is no surprise. But what about stroke? What is the relationship between meat and stroke? Are meat eaters somehow better off?

In a word, no. A 2016 meta-analysis showed that eating meat increases the risk of ischemic stroke, which is the common type of stroke caused by a loss of blood supply to the brain. Continue reading “Meat and Stroke”
