Reduce Cancer Risk With Plant-Based Foods

plant-based-foodsA new major report from the World Cancer Research Fund and the American Institute for Cancer Research recommends emphasizing plant-based foods to reduce cancer risk.

The new report – Diet, Nutrition, Physical Activity and Cancer: a Global Perspective – analyzed data from 51 million people to create a global blueprint for preventing cancer. The researchers found strong evidence that consuming both red meat and processed meat increases the risk of colorectal cancer. They also found that there is evidence that consumption of dairy products could increase the risk of prostate cancer. New York City Schools Could Become First to Ban Processed Meat

sausage-egg-cheeseExciting news from New York: Brooklyn Borough President Eric L. Adams and Council Member Fernando Cabrera have just introduced a resolution to the New York City Council that would remove processed meat from the city’s school lunches.

The landmark resolution cites a 2015 report from the World Health Organization that declared processed meat, such as hot dogs, pepperoni, bacon, sausage and deli meat, carcinogenic to humans. Don’t Let Hot Dogs Strike You Out This Baseball Season

hot-dogThis past Thursday, the Major League Baseball teams celebrated Opening Day – kicking off a season of increased colorectal cancer risk for baseball fans. According to the National Hot Dog and Sausage Council, baseball fans are expected to eat more than 19 million hot dogs during the 2018 season. But even eating just one hot dog a day can increase the risk of colorectal cancer, which kills more than 50,000 Americans per year.

Dinner Tonight: Maple Tofu Steaks and Spinach

maple-tofuFor many, tofu may seem daunting to prepare. It looks a little weird when it’s fresh from the package, and the flavor is very mild or bland. But when prepared correctly, it’s so much more than a boring block of tofu! Tofu is a complete vegetarian protein with only about 100 calories per 1/2 cup serving. Depending on the brand and firming agent used, it can also be an excellent source of calcium. Organic tofu is best.

Tofu is a versatile ingredient that can replace meat in almost any type of dish. This is a great recipe for Meatless Monday and although tofu isn’t a favorite in our house, this recipe went over well. It may have been the fact that the tofu was flavored with maple syrup!
