overnight-oatmealVersions of this recipe have been popping up all over social media. I finally decided to give it a try and I am so glad I did. Overnight oatmeal is ideal for those who have no time for breakfast. Prepared in the evening, all you have to do is take it out of the fridge and eat it. You can even take it with you if you have made in a to-go container.

Nutritionally, this is a powerhouse. Heart healthy oats offer tons of fiber, chia seeds are chock full of antioxidants, protein and omega 3s, plus vitamins and minerals galore, depending on what toppings you choose.

Welcome to Molly Carr, CRNP, MS, CNS, a New Practitioner at Village Green Apothecary

We are excited to welcome Molly Carr to Village Green Apothecary. She is a nurse practitioner, herbalist, and certified nutrition specialist who specializes in chronic pain, sleep/ fatigue issues and nutrition/ digestion issues. Molly has worked as a nurse practitioner for 16 years and an herbalist for 7 years. She has always had a strong commitment to lifestyle counseling and promoting wellness in people living with health conditions associated with stress and chronic disease. From 1998 to 2003, she worked with people living with metabolic syndrome, diabetes and high blood pressure, through Kaiser Permanente. In 2006, Molly earned a Master’s Degree in Herbal Medicine after 3 years of full-time study at the Tai Sophia Institute under the directorship of Simon Mills, an internationally recognized herbalist and research writer. Since 2006, she has worked with Dr. Michael April & Associates, an integrated healthcare practice with specialties in chronic pain, fibromyalgia and sleep issues. As a Certified Nutrition Specialist, she counsels people who have nutritional deficiencies and weight management issues.

Dr. Shanti Albani, a Doctor of Naturopathic Medicine, has certifications in herbal medicine and bioidentical hormone replacement. She had a primary care practice for many years in Mexico in the small town of San Miguel de Allende. She also owned a health food store where she held trainings on health and nutrition for the general public. While living in Mexico, Dr. Albani worked for a country-wide bioidentical hormone replacement company and trained physicians in the use of bioidentical hormones. She currently lives in Florida and works for Life Extension as a Clinical Trainer.
