strawberry valentineThis yummy Strawberry Chia Pudding is the perfect treat to show someone how much you love them. The recipe is vegan and is made with strawberries, chia seeds and nondairy milk. This is from Dr. Neal Barnard’s Cookbook for Reversing Diabetes.

Chia seeds contain high concentrations of fiber, protein and healthy omegas, as well as the minerals calcium, phosphorus and manganese. But when prepared correctly, it’s so much more than a boring block of tofu! Tofu is a complete vegetarian protein with only about 100 calories per 1/2 cup serving. Depending on the brand and firming agent used, it can also be an excellent source of calcium. Organic tofu is best.

Tofu is a versatile ingredient that can replace meat in almost any type of dish. Dinner Tonight: Stuffed Sweet Potatoes

sweet-potatoesStuffed peppers are delicious, but if you want to try something different, stuffed sweet potatoes may become your new favorite. This recipe combines three superfoods – lentils, sweet potatoes and kale – to make this hearty and heart-healthy dish, loaded with fiber and all sorts of nutrients.

Lentils have a wide spectrum of essential amino acids and are a good protein source. They are rich in folic acid, iron, phosphorus and copper. Sweet potatoes are loaded with vitamin A, vitamin C, potassium and fiber. Not to be outdone, kale is is rich in vitamins A, C, and K, as well as fiber, calcium and iron.
