popsicleHealthy frozen treats are a staple around here when the temps start hitting the 80s. They are a tasty way to keep the kids cool. However, commercial popsicles can be loaded with sugar, artificial colors and flavors.

Frozen treats from are easy to make and can be a delicious way to sneak in greens, as well as other fruits and veggies that aren’t favorites. All you need is a popsicle mold, healthy ingredients and your imagination. Blueberries, kale, spinach… the possibilities are endless! And remember, these aren’t just for kids, either.

Drink Today: Pineapple Lime Sports Drink

pineapple lime drinkI have kids in soccer, lacrosse, baseball and hockey, so hydration is serious business around here – and my kids love those colorful sports drinks that are everywhere. A sports drink is meant to deliver hydration as well as fast digesting carbohydrates for a source of quick energy, plus some electrolytes (like sodium and potassium) to replace some of what is lost in sweat. Unfortunately, most store-bought sports drinks also come with tons of added sugar, or artificial sweeteners, artificial colors and other ingredients you just don’t want or need.

Snack Today: Mexican Caviar Dip

bean dip smallerIf you want to be a hit at your next get-together, make this Mexican Caviar Dip! This is my go-to dish when I am asked to bring something, and I am usually asked to bring this. It is the recipe I get asked for the most. Beans, corn, lentils, celery and peppers all marinated in an apple cider vinegar and olive oil dressing.

The original recipe came from my godmother and has been tweaked to use less sugar and add fresh cilantro. To make this recipe super simple, you can use canned beans and corn, but if you have time and energy, soak the beans and use fresh corn on the cob that has been roasted and cut from the cob. Lunch Today: Avocado and Quinoa Salad

Snack Today: GORP

GORP cropFor years I have heard the term GORP and associated it with trail mix but never really knew where the name came from. Well, thanks to Google, I have recently found out that GORP may be an acronym for “good old raisins and peanuts” or alternately, “granola, oats, raisins, peanuts.” But whatever the acronym, GORP is trail mix and can be a nutritionally dense and tasty treat that can provide long-lasting energy, making it perfect for summer outdoor activities like hiking.
