Study: Autism Spectrum Disorder and Gluten- and Casein-Free Diets

If you have a child who is on the autism spectrum disorder, you should read this interview with Laura Cousino Kelin, PhD. She discusses the results of her study, which looks at the effectiveness of gluten-free (protein found in wheat) and casein-free (protein found in milk) diets for children with autism spectrum disorder.

If you find going gluten-free and casein-free a daunting task, do not let it discourage you from trying it. The availability of casein- and gluten-free foods has increased substantially over the years and they are readily available at your local grocery store. Reading labels is also important, as these two ingredients can be hidden in things like soy sauce, salad dressings, and even spaghetti sauce.

Lunch Bag Tips for Kids

With only weeks to go, now is a good time to start thinking about what you will be packing in your kids’ lunches. As parents, we want to make sure that our kids are eating the most nutritious foods, but in a busy world, achieving this is sometimes easier said than done, and so  we look for simple lunch solutions for our kids.

Some companies put together pre-made lunch kits. Convenient, yes, but these kits are often not a healthy choice. One kit I looked at this weekend contained a whopping 1,940 mg of sodium, well above the daily maximum recommended for young children (1,200 mg). And with only one gram of fiber, this meal won’t go far toward meeting many of your child’s dietary needs.

Here are some tips to help you get ready for lunch packing:

· Prepare and organize school lunches for the entire week on Sunday.

· Ask your children to help out – let them choose favorite fruits, veggies, and sandwich ingredients. Assign them the role of assistant chef. Continue reading “Lunch Bag Tips for Kids”

Reversing Type II Diabetes

I have an inspiring story to share about my mom, whom I am very proud of. She was diagnosed with type II diabetes in April 2011 and is currently “diabetes free” due to her hard work and dedication to improving her health. Over the years, there were definite warning signs of a potential diabetes diagnosis. She developed gestational diabetes while pregnant with my sister and had been putting on weight (particularly around her abdomen) for the past few years.

My mom took her diagnosis as a wakeup call. She was determined not to take medication, so she consulted me for diet and supplement recommendations. The first thing we did was revamp her diet and get her eating low glycemic foods, rich in fresh vegetables and fruits, high quality protein, whole grains, and healthy fats. She stopped eating sugar and started preparing all of her meals from scratch. Through her diet changes and daily walks, she lost over 60 pounds and is feeling great. Her energy is better than it has been in years. In addition, her hemoglobin A1c (important blood test used to determine blood sugar control) went from 8.1 to a normal level of 5.3.  And, her cholesterol greatly improved from 237 to 196.

Beyond her dietary changes, my mom has been taking supplements on a regular basis. Continue reading “Reversing Type II Diabetes”

Her well-researched book, Nourishing Traditions: The Cookbook that Challenges Politically Correct Nutrition and the Diet Dictocrats, is a thought-provoking guide to traditional foods and it contains a startling message: animal fats and cholesterol are vital factors in the diet, necessary for normal growth, proper function of the brain and nervous system, protection from disease and optimum energy levels.
