Thanksgiving Sweet Potatoes: Healthy and Delicious

sweet potatoesWith Thanksgiving right around the corner, I have been busy preparing our holiday menu. While my family and I have a lot of favorite dishes that we enjoy making each year, it’s always fun to try new recipes. One food that we love to get creative with is sweet potatoes. Besides being delicious, this root vegetable is also a rich source of important nutrients, such as vitamin A, vitamin C, manganese, B vitamins, copper and magnesium. Considered a “superfood” by many nutrition experts, sweet potatoes are one of the least likely allergenic foods, are incredibly versatile, and have many health benefits. While they are a Thanksgiving staple, sweet potatoes really should be enjoyed year round. Continue reading “Thanksgiving Sweet Potatoes: Healthy and Delicious”

Vitamins and Minerals: From A to Zinc

carrots-sweet-potatoesThe world of vitamins and minerals can be confusing and intimidating. There are eight forms of vitamin B alone! In the next few weeks, I hope to bring a little more clarity to vitamins and minerals, the reasons we need them, the different forms they come in, and how much we need to take.

Vitamin A Reduces Skin Cancer Risk

A study published in the Journal of of Investigative Dermatology suggests that retinol, a form of vitamin A present in foods of animal origin such as liver, eggs, and milk, could act as a chemoprotective agent against melanoma when taken as a supplement.

Researchers analyzed melanoma risk among 69,635 people. Study participants were aged 62, on average. The researchers found that those participants who took vitamin A supplements were about 40% less likely to develop melanoma than those who did not.

The benefits were only found in those who took a vitamin A supplement, and the effects were more pronounced in women. The dose given was very high and researchers  caution that more studies need to be done.

In the meantime, the best way to avoid skin cancer is to cover up, wear hats and wear a sun block.
