Conquering Diabetes With Carbohydrates

vegan-mealCarbohydrates do not cause type 2 diabetes. In fact, a new study found just the opposite: a diet rich in carbohydrates can actually fight diabetes. A wide range of other studies looking at plant-based diets and diabetes have consistently shown similar results.

But you would not know that if you read articles such as this on in the New York Times. The paper published an opinion piece urging Americans to ditch not only sugars, but wheat, rice, corn, potatoes – even fruit – to fight diabetes and obesity. The article also recommended replacing these foods with meat, eggs and butter. Continue reading “Conquering Diabetes With Carbohydrates”

Double Your Weight Loss With a Plant-Based Diet

plant-based-dietThere’s one question that nearly everyone wants answered: which diet will really help me maintain a healthy weight? New research presented this week from the Physicians Committee’s Hana Kahleova, MD, PhD, at the American Diabetes Association’s 77th Scientific Sessions finds a plant-based vegetarian diet is the answer.

Dr. Kahleova’s research shows that a vegetarian diet centered around vegetables, fruits, whole grains, and legumes is twice as effective at boosting weight loss, compared to a traditional diabetes diet. For the study, she split 74 adults into two groups Continue reading “Double Your Weight Loss With a Plant-Based Diet”

Dinner Tonight: Portobello Burger

portobello

Why do I like a portobello mushroom at my backyard get-togethers?

Because they are a fungi!

Seriously, portobello mushrooms on the grill taste almost as hearty and meaty as a heavyweight burger but are lower in fat, cholesterol and calories. Portabellos are a good source of fiber, potassium and B vitamins. And a quarter pound offers 3 grams of protein. Another amazing benefit of this fungi is that it is rich in an antioxidant called ergothioneine. Ergothioneine is an amino acid that can only be obtained from the diet and when not enough is consumed, Continue reading “Dinner Tonight: Portobello Burger”

Lunch Today: Hearty Vegetarian Wraps

vegetarian-wraps_aWhenever there is cold, snowy weather I tend to gravitate toward soups, stews and chilis, especially when they combine beans and kale. This recipe incorporates the heartiness of beans and kale, but thrown in a wrap for a simple, satisfying and economical meal. This wrap is also a nutritional powerhouse. Packed with protein, fiber, potassium, B vitamins, vitamin A, vitamin C, beta carotene and iron, you definitely get the most bang for your buck.

Hearty Vegetarian Wraps

• 2 medium sweet potatoes, diced into small pieces
• 2 Tbsp coconut oil
• 1 bunch kale, de-stemmed and torn into bite-sized pieces Continue reading “Lunch Today: Hearty Vegetarian Wraps”

Dinner Tonight: Vegan “Butter” Tofu

vegan-butter-tofuOne of my favorite comfort meals is butter chicken. Creamy and spicy, it is such a nice meal for this never-ending winter! Usually made with chicken and butter, it can easily be made vegan with tofu and coconut milk.

Veganism is technically considered a diet that contains no animal products and nothing processed with animal products. However, for many people, veganism is more about the endless possibilities than the few restrictions. Vegan diets offer many benefits. For example, a review of 87 studies found that eating vegan was highly effective for weight loss. Vegan diets have also been linked to a reduced risk of heart disease, diabetes, high blood pressure, and some cancers. But no eating plan is foolproof, and new vegans should be aware of a few nutritional gaps in their eating plan, like the lack of vitamin B12 and other important nutrients. There are many great books to help navigate a vegan diet, and we also have nutritionists at Village Green Apothecary who can help you with questions, if you are considering veganism.
