Dinner Tonight: Blueberry Pancakes

Today is Shrove Tuesday, the last day of indulgence before the start of Lent, the 40 days Christians prepare for Easter. People also refer to today as Mardi Gras, Fat Tuesday, and of course Pancake Tuesday. Back in medieval times, pancakes were eaten on this day because they contain fat, butter and eggs which were forbidden during Lent.

Whether you observe Lent or not, why not join in the fun of Pancake Tuesday? Pancakes are a quick and easy solution to those hectic evenings. And in my house, pancakes are always a hit. I use the recipe below, because it is a good source of fiber and most importantly… delicious! Adding blueberries, gives them extra sweetness (and antioxidants!).

Dinner Tonight: Homemade Chicken Soup

There is nothing better than a hot bowl of homemade soup when you are feeling under the weather or you just want some yummy comfort food. This recipe combines veggies, chicken and loads of garlic for a feel good meal that can be made any time and not just when it’s chilly. I usually prepare this the day after I have roasted a chicken and I have leftover chicken in the fridge.

 

2 tbsp olive oil

1 zucchini diced

1 carrot diced

1 small onion

4 cloves of garlic, crushed

½ tsp grated ginger

½ tsp rosemary and thyme

6 cups of chicken broth (homemade or organic)

½ cup orzo (little oval shaped pasta)..but you can use any pasta that you like

1 cup leftover cooked chicken, shredded

salt and pepper to taste

 

Heat oil over low to med heat in a large pot. Add garlic, thyme and rosemary and heat until you smell the garlic. Careful not to burn it. Add carrots, zucchini, and onion and cook until softened (about 5minutes). Add chicken, ginger and broth and bring to boil and stir in orzo. Cover and reduce heat; simmer until tender, 10 to 15 minutes. Salt and pepper to taste.

Hanukkah Dinner: Moroccan Braised Chicken

The festival of lights is upon us!  As we set up the candles, pull out the dreidel and start to count our chocolate gelt, many of us are also preparing for a traditional Hanukkah meal. For most, that means grating potatoes for latkes and maybe brining a great big brisket.  While I wouldn’t dare replace our precious potato pancakes, perhaps we can come up with a healthier option than brisket this year.

As a traditional Moroccan dish, this chicken combines the sweet warming properties of carrots and prunes with the anti-inflammatory immune-boosting benefits of cinnamon and ginger.  A throwback to our Sephardic ancestors, it’s a perfect seasonal dish and goes great alongside a potato pancake or two (or three!).  Try it this year and it’ll become an annual family favorite.  Best of all, no one will be wanting for brisket. Dinner Tonight: Butternut Squash Soup

I love fall. The change of color in leaves, the beautiful mums on doorsteps, the cooler weather, and most especially the food! Apples, spinach, cauliflower and the variety of squashes are at their peaks right now, so take advantage of the fruits of fall and try something different.

This week’s organic bin contained, carrots, butternut squash and some yams. So I roasted them and blended them for an easy, delicious, family pleasing meal that is chock-full of vitamins, minerals, antioxidants and fiber. I paired this soup with a green salad, to which I added roasted walnuts and goat cheese.

Dinner Tonight: Grilled Fish with Tomato Salsa

I had the most amazing meal this past weekend at my cottage and it was gone before I could think to take a picture. My husband caught a 4 pound walleye, which is a light tasting freshwater fish. It is high in protein and delicious when grilled. Along with a tomato salsa made from things from our garden, it was a delicious, heart healthy (and waist healthy) meal.

Here is the recipe:

· 2 tomatoes, diced
· 1 cup diced cucumber
· 1/4 cup basil
· 2 tsp lime juice
· 2 cloves garlic, minced
· fish of your choice
· olive oil
· salt and pepper
