Lunch Today: Peach, Grapefruit and Avocado on Arugula

peachesPeach season has started. We buy them by the basket and they do not last long. And although our favorite way to enjoy them is just to wash and bite right in, peaches make a nutritious and colorful addition to many recipes.

Peaches contain a concentrated dose of vitamin C, a disease-fighting antioxidant required for tissue repair, maintenance of bone, cartilage and teeth, and formation of skin, blood vessels, ligaments and tendons. They also contain vitamin A, another antioxidant that’s important for eye and immune health, reproduction and cell function.

Dinner Tonight: Peach and Goat Cheese Pizza

peach-goat-cheese-pizzaNow that local strawberries have slowly come to an end, I’m on to the next in-season fruit around here… PEACHES! In fact, I just picked up a bushel of them this past weekend and I want to take full advantage of this sweet, lovely fruit. From eating them as a snack, to turning them into some sort of delectable dessert, to using them as a pizza topping, there is no shortage of ways to enjoy peaches.

Not only are they delicious, peaches are also nutritional powerhouses. They are a great source of vitamin C and beta carotene. Dinner Tonight: Peach Salad

peaches-2Peaches are starting to come into season around here. We have been getting baskets of them from the local farmers’ markets and tearing right into them. Peaches are rich in vitamin C, a disease-fighting antioxidant required for tissue repair, maintenance of bone, cartilage and teeth, and formation of skin, blood vessels, ligaments and tendons. Peaches also contain vitamin A, another antioxidant that’s important for eye and immune health, reproduction, and cell function.
