5 Tips for Safer Barbecuing

Recently, I had someone ask me the following question: “In the summer I really enjoy having friends and family over for cookouts. But, I have heard that barbecuing can be bad for your health. Is this true?”

Great question. The answer is yes, but don’t cancel your BBQ plans just yet. Research has identified two carcinogenic by-products associated with barbecuing red meat, poultry, lamb, pork and fish. The two carcinogens to be aware of are heterocyclic amines (HCAs) and polycyclic aromatic hydrocarbons (PAHs). HCAs are formed from high temperatures overcooking or char-grilling meat. Studies have shown that this compound can cause cancer in mice. And, PAHs are formed when fat drips onto the coal or hot surface. The smoke carries the PAHs to the food. They can also form directly on the food when it is charred.

Ear Infections and Children

Apparently, three out of 4 children will suffer from an ear infection according to the National Institute on Deafness and Other Communication Disorders. Ear infections occur when viruses or bacteria get inside the ear, usually the result of a cold or other illness. Fluid and mucus can become trapped deep inside the ear. They are more common with bottle feeders and amongst boys.

My little guy (18 months on Monday) has had two ear infections and both times resulted in a visit to his doctor and both times we were given a prescription for antibiotics but with a word of caution. My doctor does not like to give out antibiotics for ear infections, because according to her most ear infections are caused by viruses, and even those that are bacteria related clear up on their own within a few days. This actually is similar to the guidelines put out by the  American Academy of Pediatrics and the American Academy of Family Physicians. Among other things, those guidelines recommend that pain medication be prescribed for most children and antibiotics used only if the conditions persist or don’t improve. What Are EFA’s?

There are two families of essential fatty acids or EFAs: Omega-3 and Omega-6, and proper cell function is dependent on a balanced intake of both. The over-consumption of Omega-6 fats from refined vegetable oils, processed foods and meat in our diet has upset this balance however, in a very big way.

EFAs are vital structural components of the cell membrane that surrounds and protects all 100 trillion cells in the body, and research has determined that in order to prevent deficiency and encourage optimal health, EFAs must be consumed daily. Since our levels of Omega-3s are far below those necessary for optimal health and prevention of chronic disease, the recommendation is to consume more Omega-3s than Omega-6s.

The best sources of the Omega-3 fats, EPA and DHA, are cold water fish such as sardines, anchovies, salmon, and herring. These are EFAs because the human body requires them but is unable to make sufficient quantities, therefore, they must be obtained from the diet or supplementation.
