While my family and I have a lot of favorite dishes that we enjoy making each year, it’s always fun to try new recipes. One food that we love to get creative with is sweet potatoes. Besides being delicious, this root vegetable is also a rich source of important nutrients, such as vitamin A, vitamin C, manganese, B vitamins, copper and magnesium. Considered a “superfood” by many nutrition experts, sweet potatoes are one of the least likely allergenic foods, are incredibly versatile, and have many health benefits. Prostate Cancer Risk: Dairy Products or Vegan Diet?

tomato soupResearch shows that men who consume three or more servings of low- or high-fat dairy products a day had a 141% higher risk for death due to prostate cancer compared to those who consumed less than one serving. Other research has also linked dairy to increased prostate cancer risk and mortality. Red and processed meat and eggs are also associated with increased risk for prostate cancer.

On the other hand, eating a plant-based diet has been linked to lower prostate cancer risk and slower progression if diagnosed. Fruits and vegetables rich in lycopene (the bright red pigment found in tomatoes, watermelon and pink grapefruit) may be especially beneficial. Breakfast Today: Brain Food Smoothie

blueberry smoothie 2Last week, in the first part of my series about brain health, I looked at food and good nutrition and its role in cognitive function. So, I started thinking of ways I could combine some of these foods into a quick and easy meal. I spent the weekend coming up with yummy smoothie recipes using some of the foods mentioned and although all were delicious, my family and I had a clear favorite.

Dinner Tonight: Leftover Roasted Vegetable Soup

roasted vegetablesThis weekend we cleaned out the fridge and there were some pretty sad looking vegetables in the drawer. We also had an overabundance of tomatoes from my parents’ garden. But instead of tossing them into compost, I cleaned them up and turned those droopy veggies into a yummy roasted vegetable soup.

Food waste has big social, environmental and economical impacts. The U.N. Food and Agriculture Organization estimates that almost 40% of the food produced and distributed in the United States never gets eaten. That works out to an estimated $160 billion in food a year.
