Today’s Snack: Nutty Maple Granola

granolaGranola is one of those things you can have for breakfast, lunch, snacks, dessert… basically any time of day. It can be eaten as is (think trail mix), or added as a topping to yogurt, cereal, or even ice cream.

This nutty maple granola recipe combines a few of my favorite things like coconut, maple syrup, hemp hearts and hazelnuts, and a handful of this granola is loaded with antioxidants, protein, good fats and fiber. This recipe also includes cacao nibs. Cacao nibs are cacao beans that have been roasted, separated from their husks, and broken into smaller pieces. New Study: Blueberries Can Help Fight Alzheimer’s

blueberries can help fight alzheimer'sAlzheimer’s disease is a devastating form of dementia that affects thinking, memory and behavior. A new study by Dr. Robert Krikorian and his team of colleagues from the University of Cincinnati Academic Health Center has found that eating blueberries can help fight Alzheimer’s.

The study followed two groups, one that was given the equivalent of 1 cup of blueberries (in the form of blueberry powder) and the other, a placebo. The subjects were over the age of 68 and had some sort of mild cognitive impairment.

After 16 weeks, the group that was given the blueberry powder had a significant improvement in cognitive function over those who took the placebo. Lunch Today: Artichoke and White Kidney Bean Wraps

artichokesI love white kidney beans. Well, I love all beans. Beans are an excellent source of protein, but they also contain protective fiber. One cup of kidney beans provides 11 grams of fiber. Fiber helps eliminate toxins and, more importantly, slows the release of complex carbohydrates, resulting in balanced blood sugar over several hours.

I also love artichokes. Their low-fat, high-fiber content makes them ideal for supporting heart health, as well as prevention of cancer. Artichokes are a nutrient-dense food, featuring 16 essential nutrients including magnesium, potassium, phosphorus, iron and calcium. Aside from its stellar mineral content, the artichoke is a good source of fiber, vitamin C, and folate.

Dinner Tonight: Heart-Healthy Tomato Soup

tomato-soupOur last recipe in honor of American Heart Month is a lycopene-rich tomato soup. Better than anything you will ever get in a can, this heart-healthy recipe is loaded with antioxidants, particularly lycopene. Lycopene is the carotenoid that gives tomatoes their red color. It is particularly beneficial for cardiovascular health and heart disease prevention.

When it comes to heart health, studies have discovered that high levels of lycopene in the blood are associated with a lower risk of cardiovascular disease in both men and women. It may also have cholesterol-lowering properties.

Dinner Tonight: Stuffed Sweet Potatoes

sweet-potatoesStuffed peppers are delicious, but if you want to try something different, stuffed sweet potatoes may become your new favorite. This recipe combines three superfoods – lentils, sweet potatoes and kale – to make this hearty and heart-healthy dish, loaded with fiber and all sorts of nutrients.

Lentils have a wide spectrum of essential amino acids and are a good protein source. They are rich in folic acid, iron, phosphorus and copper. Sweet potatoes are loaded with vitamin A, vitamin C, potassium and fiber. Not to be outdone, kale is is rich in vitamins A, C, and K, as well as fiber, calcium and iron.
