Dinner Tonight: Fish Tacos with Peaches and Radishes

fish-tacosWe are lucky enough to have a cottage where we do a lot of fishing, and if we catch a good-sized pickerel or bass, we immediately try to come up with a new way to eat it. Fish tacos are always a family favorite, especially when combined with the last of the summer peaches and radishes.

This dish is high in fiber, protein and antioxidants. And depending on the fish you use, it’s a great source of essential fatty acids. You can use any light-tasting fish for this dish.

Dinner Tonight: Peach and Goat Cheese Pizza

In fact, I just picked up a bushel of them this past weekend and I want to take full advantage of this sweet, lovely fruit. From eating them as a snack, to turning them into some sort of delectable dessert, to using them as a pizza topping, there is no shortage of ways to enjoy peaches.

Not only are they delicious, peaches are also nutritional powerhouses. They are a great source of vitamin C and beta carotene. Lunch Today: Grilled Watermelon Salad

Watermelon is also packed with some of the most important antioxidants in nature. It’s an excellent source of vitamin C and a very good source of vitamin A, as beta-carotene. Dinner Tonight: Greek Salad with Dill and Parsley

greek-saladAfter finding out that dill and parsley are a cancer-fighting super duo, I knew I had to share this recipe for Greek salad. I have posted a similar recipe before, but the added hint of dill and parsley just adds a really nice flavor.

My husband and I first tried a similar salad from the salad bar at a local grocery store. It was so fresh and crisp, and summer perfect. It was also very expensive! So I thought, I could make it at home at a fraction of the cost. The great thing about this recipe is that you can adjust it to your taste.
