Dinner Tonight: Grilled Summer Vegetables

grilled-vegetablesSummer seems short enough, which means we should take every opportunity possible to spend as much time as we can in the great outdoors. So as the weather gets warmer, instead of slaving over a hot stove, try this healthy and delicious marinated vegetable medley. If you have a garden, use the bounty that it offers. Add green beans, or carrots. No matter what you use, this will be a nutritious addition to any meal.

These vegetables are tasty and delicious fresh off the grill, served with chicken, fish or tofu, but they can also be served chilled as an antipasto dish or even used as filler in a gourmet sandwich! Continue reading “Dinner Tonight: Grilled Summer Vegetables”

Lunch Today: White Bean Salad

white-bean-saladThis is a great salad to keep you going all day long. High in protein and full of flavor, thanks to fresh ingredients, this salad will be a great addition to your lunch box. Dried beans give you the best texture because they’re firmer and hold their shape better. If time is an issue, substitute canned beans, but be sure to thoroughly drain and rinse them before using. Be gentle when folding them in.

White beans such as kidney beans, cannellini or navy beans, are full of fiber and antioxidants, and are very low on the glycemic index (GI). The glycemic index is used to rank foods based on how they affect your blood sugar levels. Low GI foods, like white beans, metabolize slowly Continue reading “Lunch Today: White Bean Salad”

Dinner Tonight: Tofu Bowls with Millet and Avocado Dressing

avocadoA couple of weekends ago my neighbor made this green saucy mixture that we dipped veggies and shrimp in. I could not stop eating it, so I asked her what she called it was and she said Green Goddess Dressing. Now, I have had the bottle version before, but this one was incredible and different. This recipe uses avocado, parsley and cilantro for the lovely green color, and it omits the traditional anchovies and sour cream to make it vegan.

I used it as a dressing for this tofu and millet bowl. Millet is a grain that has a “corn-like” flavor and is gluten free. Continue reading “Dinner Tonight: Tofu Bowls with Millet and Avocado Dressing”

Lunch Today: Mango Papaya Salsa

mango-papaya-salsaThis isn’t really a meal per se, but mango papaya salsa is a great topping for fish, burgers and chicken, and it makes a great dip, too! Since many will be having backyard parties and doing some grilling, this easy-to-make salsa, bursting with tropical fruit flavors, will be a hit with your friends.

Papaya, one of the stars of this recipe, contains more vitamin A than carrots and more vitamin C than oranges. It also contains an enzyme called papain that helps digest foods. The other star, mango, is rich in vitamins, minerals and antioxidants (particularly vitamins A and C, potassium and beta-carotene). Continue reading “Lunch Today: Mango Papaya Salsa”

Dinner Tonight: Creamy Raw Avocado Soup

avocado-soup_aSwitching to a raw food diet, also known as a “living food” diet, can have significant health and wellness benefits, from increasing energy and weight loss to disease prevention and minimizing the degenerative conditions of aging. A raw food diet consists of eating fully uncooked and unprocessed food, but can include food preparation techniques such as fermenting, spiralizing, dehydrating, and blending. And because there is little to no heat applied in the raw food kitchen, foods are kept “living,” which preserves the integrity of many nutrients. Some raw “cooking” techniques, such as sprouting and fermenting, unlock valuable nutrients, making an ingredient more digestible. Continue reading “Dinner Tonight: Creamy Raw Avocado Soup”
