Instead of meat, this vegan version of classic shish kabob, uses tofu, which is made from soybean curds. Tofu is naturally gluten-free and low calorie and it contains no cholesterol and is an excellent source of protein, iron and calcium. Organic tofu is best. Dessert Today: Cantaloupe Salad

I have fond memories of my dad just slicing up mangoes, honeydews and even pineapples at the table and passing around slices. Cantaloupes were one of my favorites!

Canning tomatoes is a good way to preserve abundant harvest and it gives you the opportunity to savor your tomatoes at a future time.

Although I love tomatoes for their wonderfully delectable taste, tomatoes are also packed with nutrients. One of these is lycopene. Dinner Tonight: Simple Brussels Sprouts Side

brussels-sprouts2My blog from a couple weeks ago, about the importance of eating cruciferous vegetables in the role of cancer prevention got me thinking that it was time we had more recipes about these wonderful, strong-smelling vegetables. One of my favorites is Brussels sprouts.

Brussels sprouts are great sources of vitamin C and vitamin K, as well as sulforaphane and indole 3 carbinol. Sulforaphane, a phytonutrient formed in Brussels sprouts when the leaves are chopped or chewed, boosts our body’s natural detoxification enzymes and can help clear cancer-causing substances from our system.
