roasted vegetablesThis weekend we cleaned out the fridge and there were some pretty sad looking vegetables in the drawer. We also had an overabundance of tomatoes from my parents’ garden. But instead of tossing them into compost, I cleaned them up and turned those droopy veggies into a yummy roasted vegetable soup.

Food waste has big social, environmental and economical impacts. The U.N. Food and Agriculture Organization estimates that almost 40% of the food produced and distributed in the United States never gets eaten. That works out to an estimated $160 billion in food a year. Breakfast Today: Crock-Pot Pumpkin Pie Oatmeal

pumpkin oatmeal aIt’s October, and with October comes everything pumpkin! And this Crock-Pot Pumpkin Pie Oatmeal is a breakfast winner. The best part is that it is can be done in your slow cooker and you have breakfast ready to eat first thing in the morning. This is a different twist on overnight oats!

This super healthy breakfast is made with steel cut oats, which are are slightly chewy with a nutty flavor. High in fiber, they usually take a little more time to prepare than traditional oats, and that makes them perfect for the slow cooker.
