At first it seemed daunting and undoable, especially with a busy schedule and two young children, but after a few weeks and with some thought, we have cut down a lot on paper and plastic and we really don’t miss these items like I thought we would. New York Schools Adopt Meatless Mondays

school lunchHealth is officially on the menu every Monday in New York City public schools!

Yesterday, Mayor Bill de Blasio, Schools Chancellor Richard A. Carranza, and Brooklyn Borough President Eric Adams announced that New York City schools are adopting Meatless Mondays – bringing plant-based meals to all 1 million students in the nation’s largest school district. Mayor de Blasio cited the benefits of plant-based meals at a press conference earlier today, mentioning that the city adopted the new policy to promote students’ health and protect the planet. Snack Today: Maple Nut Granola

maple nut granolaIt is maple syrup season and really it is our first spring crop. I am lucky to be surrounded by sugar maple bushes and and maple syrup festivals are kicking into high gear. If you ever have the opportunity to check out a maple syrup farm, you will not regret it. The amount of work and love that goes into producing maple syrup is truly something.

The time period for sugar water collection is short, usually occurring during two to three weeks in March and April.
