Usually, my go-to meal for staving off chills is soup, but this combination of butternut squash topped with pesto and pomegranate seeds warmed my soul! And I made this last night with a toaster oven and a hot plate, so you know it must have been pretty easy! The great thing about this recipe is how versatile it is. Although, you can make pesto from scratch, you can easily use your favorite store bought pesto, as well. And you don’t have to use butternut squash, you can use whatever squash you like. Lunch Today: Peach, Grapefruit and Avocado on Arugula

peachesPeach season has started. We buy them by the basket and they do not last long. And although our favorite way to enjoy them is just to wash and bite right in, peaches make a nutritious and colorful addition to many recipes.

Peaches contain a concentrated dose of vitamin C, a disease-fighting antioxidant required for tissue repair, maintenance of bone, cartilage and teeth, and formation of skin, blood vessels, ligaments and tendons. They also contain vitamin A, another antioxidant that’s important for eye and immune health, reproduction and cell function.

Dinner Tonight: Squash and Kale Quesadillas

butternut-squash-2While I was looking into healthy lunch ideas, I stumbled on a picture of a quesadilla that combined squash and kale with gooey cheese. I was hooked and made it last night. So simple and flavorful, this is an easy dinner that can also be reheated for lunch the next day.

Obviously, I love butternut squash, as can be seen in these recipes here, here, and here! Thankfully, my kids love butternut squash, too. This delicious, healthy and versatile vegetable has shown up in my organic bin almost every week for the last couple of months, so I need to keep finding new and interesting ways to serve it up. The best part is that I am enjoying locally grown veggies at their peak, in terms of both flavor and nutritional value. And that goes for the kale, too, which loves this colder weather!
