Dinner Tonight: Greek Salad with Dill and Parsley

greek-saladAfter finding out that dill and parsley are a cancer-fighting super duo, I knew I had to share this recipe for Greek salad. I have posted a similar recipe before, but the added hint of dill and parsley just adds a really nice flavor.

My husband and I first tried a similar salad from the salad bar at a local grocery store. It was so fresh and crisp, and summer perfect. It was also very expensive! So I thought, I could make it at home at a fraction of the cost. The great thing about this recipe is that you can adjust it to your taste.

Lunch Today: Organic Strawberry and Cucumber Salad

strawberryIT’S STRAWBERRY SEASON!! Every year we head up to a local farm where organic strawberry picking is available. And every year, I think my kids do a better job eating strawberries then actually filling the buckets.

Organic strawberries are a must in our house, especially this year, when strawberries were ranked number 1 as the most pesticide laden fruit/vegetable, according to the Environmental Working Group.

Strawberries are packed with antioxidants (anthocyanin) and vitamin C, as well as being rich in folate and fiber. This recipe combines the sweetness of strawberries with the crisp taste of cucumbers for a refreshing side to fish or even a simple light lunch on its own. Dinner Tonight: Cold Cucumber Soup

cucumbersWhenever I visit my parents at this time of year, I raid their backyard garden. I’m always astonished at the bounty that such a small space can provide. Tomatoes, beans, onions, carrots, and zucchini are just a small sampling of what it offers. This year the cucumbers are also doing extremely well, and we are definitely getting our fill.

Although tasty sliced up in a salad, or even added to water for a refreshing drink, cucumbers are equally delicious when blended with spinach and some herbs for a cold summer soup.

Cucumbers offer a variety of health benefits.

  • They are about 96% water, so they are an excellent source of hydration with the added bonus of being a low calorie food
  • They have vitamin A, B vitamins, and vitamin C
  • They lower uric acid levels in your system, keeping the kidneys happy
  • A compound called sterols in cucumbers helps reduce bad cholesterol.
