Adding nourishing foods full of healthy antioxidants is one of the easiest things you can do for yourself, if not the best. Here are ten cancer fighting foods that have shown to have true benefits when it comes to building your immune system. Choose organic whenever possible.

1. Apples – We are in the middle of apple season right now, and the varieties of apples available are fantastic. Studies show that apple skins inhibit the growth of cancer cells.

2. Asian mushrooms – Shiitake, reishi, and maitake mushrooms boost the immune system. In a scientific review, researchers found that the metabolites contained within mushroom cell walls appeared to stimulate different cells of the immune system, including T and B cells, macrophages, and natural killer cells. 1. The right juicer:  Juicers can be a major investment. It helps to do some thorough research before deciding on your purchase. Good construction, juice quality, and the amount of juice you actually get are important considerations. Quality juicers extract as much as 25% more juice from fruits and vegetables than lower-end models. There are also some great blenders that can do double duty as juicers (but blenders do a different type of work because they use the whole fruit or vegetable, so the fiber and pulp remains in your “juice”). Dinner Tonight: Sweet Potato and Lentil Soup

lentil-sweet-potato-soupAll this snow has me pulling out the soup pots. Soup is the perfect warming meal for days when you can’t go anywhere. This one in particular has a bit of Thai flair to it. You will need red curry paste. I use Thai Kitchen Red Curry Paste, which you can find at most health food stores.

This recipe combines coconut milk, sweet potatoes and lentils for a hearty vegetarian meal that goes will with some warm naan bread.

Sweet potatoes are rich in vitamin A, vitamin C, potassium, and fiber. And lentils have a wide spectrum of essential amino acids and are a good protein source. They’re rich in folic acid, iron, phosphorus, and copper.

Sweet Potato and Lentil Soup

1 Tbsp extra-virgin olive oil
1 onion, peeled and diced
2 Tbsp Thai curry paste
2 medium-sized red-skinned potatoes, peeled and cut into 1/2 inch  cubes
1 large  sweet potato, peeled and cut into 1/2 inch cubes

Snack Tonight: Beet and Walnut Dip

beetWhen I think of a food that is a nutrient powerhouse, the deep red-colored beet always comes to mind. Beets contain the powerful antioxidant betacyanin, which several studies have shown helps both to fight and prevent various types of cancer, especially colon cancer. Beets are also an excellent remedy for constipation, act as a cleanse for the liver, and provide overall support for kidney, gallbladder, stomach, and intestinal problems.

Rich in calcium, iron, magnesium, and phosphorus, as well as vitamin C, carotene, and B vitamins, beets nourish the nerves, aid lymphatic function, and increase energy.

And… aside from the many healing properties beets have to offer, they simply taste great. This recipe combines all the wonderful properties of beets and walnuts to make a tasty dip that no one will be able to pass up.

Dinner Tonight: Blueberry Smoothie

BlueberriesSome nights, there just isn’t time to make a traditional meal.  With hockey, soccer and swimming practices, a smoothie can be quick and nutritious and provide  the whole family with energy to keep going until bath time.

Usually reserved for breakfast on the go, smoothies are great any time of the day, especially in the summer, when sometimes you need something refreshing. This time of year, blueberries are everywhere and they make a perfect seasonal addition to the recipe below.

Blueberries are a fantastic source of disease-fighting antioxidants, while ricotta cheese provides protein, and the almonds are brimming with healthy fats.

 

Blueberry Smoothie 

  • 1 1/4 cup unflavored almond milk
  • 1/4 cup blueberries
  • 1/4 ricotta cheese
  • 1 Tbsp maple syrup
  • 1/4 tsp vanilla
  • 1/8 tsp cinnamon
  • 3 or 4 raw almonds

Place all ingredients into a blender container in order listed and blend until smooth, about 1 minute. Pour into a chilled cup and enjoy! This makes one large smoothie, or two smaller smoothies. You can add more or less of the ingredients depending, on your taste.
